Instead of copying the successful brewery equation followed by so many Asheville establishments, Hillman Beer forges its own path by delivering a pub-like feel to the craft beer scene.

A family-owned and operated business, Hillman Beer is the mastermind of Brad, Greig, and Brandi Hillman. The trio works hard to supply a winning combination of comfort and quality. When you arrive, you’ll be struck by the chill, yet slightly quirky ambiance. Long communal tables encourage you and your cohorts to intermingle with other beer lovers. The brewery’s outside space is even more impressive, however; ample seating is available and the people (and dog) watching opportunities are exceptional. Order your favorite beer and enjoy a leisurely game of cornhole with your best buds.

Hillman offers a nice selection of classic brews, as well as a few adventurous options. If you struggle to choose a favorite, opt for a flight; you’ll receive four glasses plus a coaster with everything labeled so you don’t forget which is which. Not into beer? Guest taps typically include cider or ginger beer from local establishments. Wine and soda are also available.

If you prefer to drink your beer alongside snacks or a full meal, you’ll appreciate the presence of the Rise Above Deli, located within the brewery. While the deli is technically a separate establishment, many visitors arrive with the intent of ordering from both the deli and the brewery. Whether you favor soft pretzels, Reuben sandwiches, or pecan pie, you’ll find something delicious to complement your favorite beverage.

Live music plays an integral role in the Asheville brewery experience; this is one area in which Hillman Beer does not depart from local tradition. Hillman’s weekly Saturday Sounds event is a hit; every Saturday evening, local beer and music lovers gather to hear from an eclectic array of regional musicians. Past appearances have included Ashley Heath, Shawn Mullins, and Upland Drive. Other favorite events include Paws and Pints (with opportunities for pet adoption) and trivia during Think Tank Tuesdays.

Mommabeer Brown
This earthy beverage features distinctive burnt orange hop aromas. The brew pours dark brown, includes hints of caramel, and has a dry finish.

Four Fat Baby
According to Hillman’s experts, this brew will send you to ‘Belgian heaven.’ Featuring dried fruit and dark caramel notes, the Four Fat Baby is so refreshing and easy to drink, you’ll quickly find yourself ordering a second glass.

Funky Cold Medusa
The Funky Cold Medusa is the result of an ingenious collaboration between Hillman Beer and The Whale in West Asheville. Fermented exclusively with Brettanomyces, this unique beer features delectable notes of guava and mango. You’ll also appreciate the bits of lime zest and raspberry.

Biere De Garde
Take a quick trip to France without leaving Asheville or even ordering wine. Designed to imitate a French farmhouse experience, this complex brew features dark cherry notes and what Hillman’s experts refer to as a ‘slight funkiness’ arising from the wild yeast.

-If Hillman’s Pups and Pints events are any indication, the owners are passionate about dogs. Every year, they encourage fellow dog lovers to submit photos of their canine friends for the Dogs Days of Hillman Beer Calendar, with proceeds supporting Charlie’s Angels Animal Rescue.
